Spaghetti Salad

 Spaghetti salad is a delightful and refreshing dish that combines cooked spaghetti with various vegetables and a tangy dressing. Here's a basic recipe for a spaghetti salad:

Ingredients:

For the Salad:

  • 8 ounces (about half a package) of spaghetti
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (red, green, or a combination), diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup black olives, sliced (optional)
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup grated Parmesan cheese (optional)

For the Dressing:

  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1-2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or sugar
  • Salt and pepper to taste

Instructions:

  1. Cook Spaghetti:

    • Bring a large pot of salted water to a boil.
    • Add the spaghetti and cook according to the package instructions until it's al dente (usually about 8-10 minutes).
    • Drain the pasta and rinse it under cold water to stop the cooking process. Drain well and set it aside to cool.
  2. Prepare Vegetables:

    • While the pasta is cooking, prepare your vegetables. Wash and chop the cherry tomatoes, cucumber, bell peppers, red onion, black olives, and basil leaves. You can adjust the quantities and types of vegetables to your liking.
  3. Make the Dressing:

    • In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, honey (or sugar), salt, and pepper. Taste and adjust the seasoning to your preference. If you prefer a tangier dressing, you can add more vinegar.
  4. Combine:

    • In a large mixing bowl, combine the cooked and cooled spaghetti with the chopped vegetables and black olives, if using.
  5. Add Dressing:

    • Pour the dressing over the salad and toss everything together until the pasta and vegetables are evenly coated with the dressing.
  6. Chill:

    • Cover the salad with plastic wrap or a lid and refrigerate for at least 1-2 hours to allow the flavors to meld and the salad to chill. You can also make it a day in advance for even better flavor.
  7. Garnish and Serve:

    • Before serving, sprinkle chopped fresh basil and grated Parmesan cheese over the top for added flavor and garnish.
